Hearty, low-carb meal - meatloaf and mashed cauliflower

Not that I count carbs, I love them too much.  But here was tonight's dinner which was very yummy and low carb.  Traditional meat loaf with mashed cauliflower.  Meatloaf you can prepare during the day when the little ones are napping - ground beef, sauteed onions, egg, milk, bread crumbs, garlic salt.  Mix, put in a meat loaf pan and top with a ketchup and brown sugar topping.  Stick it in the fridge until you're ready to cook it at night.  It takes about an hour to cook at 350.  Then, instead of potatoes, I steamed a head of cauliflower and then mashed them up with some milk, cheddar cheese and salt.

The picture looks kinda unappetizing, it's hard to make a meat loaf look pretty!
